Slackened - White Chocolate Chip Oatmeal Cookies

So, I've put off posting and it stretched to over a week! A thousand and one apologies to those who do look forward to more frequent postings.
Work has been overwhelming with overtime being inevitable almost everyday of the week.

Anyway, as usual, I've been trying to use up baking goods I've stored up. One of them was white chocolate drops. I'm not huge fan of white chocolate except in white chocolate and macadamia nut cookies but I thought I'd give this a shot.
The cookies were soft and chewy and the nuts balanced out the sweetness of the chocolate. There are better cookies out there but if you're a nut for nutty cookies, this is one you should try.
I've got a couple more recipes waiting in line and I can't wait to post about those! (:

Here goes:

INGREDIENTS adapted from allrecipes.com (makes approx. 36 cookies)
  • 1 cup margarine
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 2 teaspoons of vanilla extract
  • 3 cups all purpose flour
  • 1 1/2 tsp double acting baking powder
  • 1 tsp salt
  • 1 1/2 cups rolled oats
  • 2 cups white chocolate chips
  • 1 cup chopped pecans
METHOD
  1. Cream margarine and sugars until creamy
  2. Add eggs and vanilla and beat well
  3. Add in the flour, salt and baking powder and mix well
  4. Stir in the oats, chocolate and pecans and stir until all well combined
  5. Spoon tablespoons of the mixture onto lined cookie trays, allowing space for spreading
  6. Using a wet fork, gently flatten the cookies
  7. Bake in a preheated oven for 180 degrees C for about 12-14 mins
  8. Remove from oven when done and leave to cool
