Refresh - Sunny Citrus Bars

Sunny indeeed. Far more than I can say for the weather here in England! There hasn't been a day without rain except on Saturday! Quite a summer...
Nonetheless, this recipe is a keeper. Truly a breath of fresh air with all that citrus and sugar!

The three layers, and therefore three textures, of crust, filling and icing went well together. However, if one is to eat this treat in bouts of two or more slices, I'd suggest reducing the sugar more than I already have done. The girls/boys at work seemed to love the bars and they're easy to make in bulk.

Enough rambling! Here's the adapted recipe from Lick The Bowl Good:

INGREDIENTS
Crust
•2 cups plain flour
•3/4 cup icing sugar
•3/4 cup cold margarine
Filling
•1 cup granulated sugar
•3 tbsp plain flour
•1 tsp double acting baking powder
•1/8 tsp salt
•4 eggs
•Juice of 1 large orange
•Juice of 1 large lemon
•1/4 cup butter melted
•Zest of 1 orange & 1 lemon
Icing
•1 1/2 cups icing sugar
•Lemon juice to taste (doesn't have to be freshly squeezed)
METHOD
1.Line & grease a 9x13" baking pan
2.In a mixing bowl, mix the crust ingredients well until a dough is formed
3.Spread the dough evenly over the base of the pan and bake in a preheated oven of 180 degrees C until slightly golden brown and dry - approx. 25-30mins
4.While the crust is baking, mix the flour, sugar, baking powder, salt in a large mixing bowl
5.Add in the 4 eggs and beat until all well incorporated
6.Add the butter and the juices and mix well
7.Mix in the zest and ensure evenly distributed
8.Pour the mixture over the crust and bake in the oven for about 25-30mins or until well set and just starting to brown
9.Remove from oven and leave to cool
10.When "cake" has cooled, mix the icing sugar with the lemon juice to taste. I used almost 1/4 a cup of juice, but like I said, to taste
11.Pour the icing over the "cake" and leave to set
12.When cake has fully cooled and icing has set, remove the "cake" from the tin and cut into bars of desired size
13.Refrigerate until ready to serve
14.Decorate as desired
