Pear-ly - Ginger Cupcakes
Hello!!I'm so very sorry that I haven't posted. I've already got 2 recipes lined up but just couldn't find the time to sit down and hit the keyboard. hohum.
So this year we celebrated my parents' 30th wedding anniversary. Mummy arranged a surprise party for Daddy where friends and family gave thanks for and celebrated their marriage. So what is an occasion without cake?

I know it's late, but Happy Easter! (:
This creation was meant to commemorate easter. I guess it still does.
Anyway, so I've found a fantastic fluffy vanilla cake and guess what? My frosting worked! No fancy meringue, ganache etc. Just a butter based frosting. Brilliant!

MS: Devil's Food Cupcakes
Okay, so I'm not too keen on the name of the cupcakes. But I'd just call them moist chocolate cupcakes.
I'm not too large a fan of plain chocolate. I prefer my chocolate to have things in it; nuts, fruit, nougat etc. And maybe like what J says, chocolate is too easy to do. So many people make stuff with it! Maybe vanilla is more a challenge. That subtle, soft, light sweet thing. (:

MS: Lemon Meringue Cupcakes
So, for Christmas, one wonderful present I received with great joy was a Martha Stewart Cupcake Calendar. In this calendar there are recipes for various cupcakes. I am determined to complete all 12 cupcakes with a few modifications to the recipes as needed by the end of this year.
Originally I thought of doing them all consecutively but thought that boring and there's more to the baking world than just cupcakes!

Chocolate Oreo Cupcakes
YUMMY!! I wasn't too sure if everyone loved the spiced fruits and extra-richness stirred into Christmas so I had to try something else. These looked so inviting that I had to try them. (:
Chewy chocolate cupcakes with oreo-laced icing. I chose cute Christmas liners to add to the festivities. Originally I wanted ref-foiled liners but I got to Lemon Zest too late and had to settle for this.

Lime & Pistachio Cupcakes
I've had 2 days off work and managed to bake a couple of things. Chose to write about these cupcakes.
Honestly, I'd love to bake more. But more baking means more money and who on earth wants to eat so much? I know quite a few people wouldn't mind being given baked goods on a regular and frequent basis. But I just cannot get my head around the financial implications of baking like that. I don't mind baking for specific and special occasions.
Argh. I'm torn between what I'd love to do and what reality is slamming in my face.

Mini Victoria Sandwich
Sometimes, the simplest recipes are the most comforting. At least that's the case with Victoria Sandwiches. For those who don't know, Victoria Sandwiches (VS) are 2 simple buttery sponges sandwiched together with strawberry jam and covered with icing sugar.

Raspberry Cupcakes with Pillsbury Cream Cheese Icing
Today is my friend, Sarah's birthday. (: So yesterday, together with Blythe (another awesome friend!), we surprised her in the ward with a Raspberry Cupcake Tower.
The girls loved the cakes as did a few other people at home. ;) I adapted a recipe from Sweetapolita. Personally I'd replace most of the sugar with more flavoured jello crystals next time and possibly put in more jam. Adapt it to your own taste buds but this recipe is a must try for those who love fruity cupcakes!
