Celebration! - Strawberry Easter Cake

Hello one and all! :D
I thought it was appropriate to do an easter post this year too and I racked my brains for a dessert that was Easter worthy. Well, I had bought a punnet of strawberries and a pink cake came to mind. Now how does pink not shout "Easter!"? Or "Spring!"?
I hunted high and low for a recipe that would delight the palettes of the less-sugary Singaporean and I think I may have done the trick!
The strawberries burst forth flavour and tartness I couldn't be more pleased with.

Chocolate Strawberry Crumble

So here's my next baked... Chocolate Strawberry Crumble.

I had this tin of strawberry pie filling I didn't know quite what to do with. I bought it from Phoon Huat on one of my food shopping sprees. Yes, I know, other girls buy clothes, shoes etc. I, well, I buy food. Uncooked food. I buy baking accessories. Cupcake liners, sprinkles, nuts, fruit, and other itty bitty things to cook with. That's just me.

Mini Victoria Sandwich

Sometimes, the simplest recipes are the most comforting. At least that's the case with Victoria Sandwiches. For those who don't know, Victoria Sandwiches (VS) are 2 simple buttery sponges sandwiched together with strawberry jam and covered with icing sugar.

For the longest time, I've wanted to try making a VS with whipped cream in the center too. And then I thought of the idea of a mini VS! I dreamt of and pictured them delicately placed on doilies and served at a tea party or maybe a dessert buffet.
